Nutella Cinnamon Rolls

Does anyone else take comfort in baking late at night? Well, I do, and that's precisely what happened the other day.  I've been using the same cinnamon roll recipe since before I can remember, but then I thought...why not add Nutella? EVERYTHING is better with Nutella! These were so positively scrumptious it's unreal. In fact, I must from now on reserve them only for special occasions or else my body will grow to be equal in size to a small planet. Not sexy.

THE INGREDIENTS:
Dough:

2 eggs,
1 cup warm milk

1/3 cup butter, melted
4 1/2 cups bread flour (all purpose works in a pinch)
1/3 teaspoon salt
1/2 cup white sugar

1/3 cup butter, melted
1 pkg yeast (1/4 ounce)

filling:
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened
1/2 cup Nutella

icing:
3 to 5 ounces cream cheese, softened
1/4 cup (4 tablespoons) butter, softened
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Step One: Prepare the dough

Microwave milk for 45 seconds in the microwave in a large bowl, then mix in yeast to dissolve.
Add sugar, butter, salt, eggs, and flour and stir until thoroughly combined.
Dust your hands with flour and knead for several minutes.
Put in a greased bowl and cover, let sit for over an hour in a warm place.

Step Two: Prepare the filling

In a small bowl, mix brown sugar and cinnamon. Roll dough into a large rectangle about a quarter inch thick onto a floured surface. Spread dough with softened butter and then a thin layer of nutella. Sprinkle evenly with the brown sugar/cinnamon mixture.

Step Three: Roll it up

Take the longer side of the dough and roll up up dough. Cut into rolls with a large knife. You can make them as small or as large as you please!  I didn't know how to space them so I used two pans, but looking back on it I should have used one and had them smush/grow together. Cover and let rise about 30 more minutes!

Step Four: Bake

In an oven preheated to 350 F, bake rolls until golden brown, about 20 minutes.

Step Five: Topping!
While the rolls are in the oven, beat together the ingredients for the topping until you've reached the desired consistency.

Step Six: Enjoy!
Spread the topping on the rolls while they are still warm so it gets nice and melted, and enjoy every bite!

*If you plan on making these for breakfast, consider completing steps one - three the night before and then refrigerate overnight.

Lately I've been getting cravings for sweet things in the evenings and then I end up trying new recipes.

But I just realised I have to slow down the treats so I can eat a lot in Thailand next month :)
