Chicken Prosciutto Salad with Arugula and Homemade Croutons


This recipe was fun, fresh, and perfect for a summer afternoon. The best part? Crunchy, delectable homemade croutons, so easy to make you'll never use store bought ones again!

Ingredients:
2 Slices Bread
1.5 Tbs Olive Oil
1 Tsp Garlic Powder
1 Tsp. Dried Basil
1 Tsp. Dried Thyme
1 Large Bundle Arugula, Cleaned and Trimmed
20 Cherry Tomatoes, Halved
1/2 Cup Chopped Cucumber
2 - 4 Chicken Breasts, pan-seared
1 Package Prosciutto Ham, Chopped
1/4 cup Parmesan cheese, freshly grated


Step One: Chop Bread into crouton-sized squares. I used homemade whole wheat bread but any bread will do. 
Step Two: Spread out on a pan, sprinkle with 1 Tbs Olive Oil and dried herbs. Do not use fresh herbs, as they will blacken in the oven! 
Step Three: Bake at 400 degrees F for 10 - 15 minutes or until crispy.
 They're quick and easy and will be finished by the time you're done assembling your salad! 

Step Four: Cook your chicken. I simply cooked mine in a pan. If you prefer, buy a pre-cooked rotisserie chicken at the grocery store and use that!
Step Five: Heat 1 tsp of Olive Oil in a pan. Add chopped prosciutto and cook until crispy!


Step 6: Assemble chicken, prosciutto, tomatoes, cucumber, croutons and parmesan cheese atop a bed of fresh green arugula. 
Step 7: Splash with a bit of balsamic vinegar for a dressing and enjoy!

Can I substitute something for the Prosciutto?? I can't do that texture... no idea why.

I've recently started making croutons with day old bits of baguette and they are so delicious, I can't believe I wasn't making them before!
