Yummy Veggie Frittata…For Breakfast!

I woke up on Saturday morning craving a delicious breakfast. Now in Germany, a typical breakfast includes typical German “Brötchen” to be eaten with various meats, cheeses, and jams. It is a type of breakfast that will always have a place in my heart…but sometimes I just have to spare myself the carbs! 

This spin on the frittata is healthy and oh so satisfying!
  • 2 large eggs
  • 6 egg whites
  • 1 zucchini, chopped.
  • 1 tomato, roughly chopped.
  • 3 tablespoons chopped basil leaves
  • 1 clove garlic, minced
  • salt and pepper, to taste
  • dash of parmesan cheese
  • Sour cream or Greek yogurt, to garnish.

  • Preheat oven to 400 degrees Fahrenheit
  • In a medium sized bowl, combine the eggs, eggwhites and whisk until frothy.
  • Add the vegetables, basil, garlic, salt and pepper and mix together.
  • Heat a tablespoon of olive oil in a pan over medium heat.
  • Add the egg mixture, spreading it out evenly throughout the pan. Allow it to set for a minute or two and then loosen the edges with a spatula.
  • Let it cook over the stove for two to three more minutes before transferring the entire skillet to the oven where it should cook for about seven more minutes or until golden brown.
  • Flip the frittata onto a plate, top with sour cream, slice it up and serve! I added a dash of cayenne pepper for color and spice!

This recipe was easy and delicious. I will definitely be making it again!
