Menu Plan Monday...whoohoo!

Okay, I have to admit I'm super excited for this week's menu. It took a while to compile, and I found a TON of new recipes in the process which I'm setting aside for later weeks. To give you an idea about my compulsive recipe collecting, my recipe word document has now reached over 65 pages. Yikes! :)

Here's what I plan on cooking:

Spinach and Mushroom Quesadillas 

"Healthy" Oven Fried Chicken with Cauliflower Gratin 

Honey and Soy Glazed Salmon, served with an Asian style salad

Zucchini/Potato Soup with Mint and Crispy Chickpeas 

Dining Out: Sushi with Friends!

Slimmed Down Baked Macaroni and Cheese

Sauteed Veggies with Rice

As always, Saturday and Sunday's meals are tentative. Spontaneous adventures could result in substitution or omission!

I would love to know the recipe for Thursday's soup and how it turns out! You make me think I need to cook way more :)

I still haven't started my weekly meal planning! I need to! Today I'm making Fiesta Chicken though! I'll have to post about it if it turns out good. I guess we'll see!

Spinach and Mushroom Quesadillas sound divine. This week we're having Lasagna, Gumbo, burgers on the grill, chili with baked potatoes and a few other things I'm probably forgetting! Not our most exotic week- it was Blake's turn to plan and plus the weather is getting a bit crisper so we're relishing the last "summer" meals while starting up some good old comfort foods!

We usually plan out our meals before we go grocery shopping too. You are such a yummy cook- you should become a chef!
