I didn't get around to cooking a couple of things last week. We had a spontaneous date night, went out with friends, and one day we just didn't feel like cooking. That's okay though, the weekly meal plan isn't set in stone...it's an organizational aide. I had fun putting together this weeks meal plan. I'll be cooking more vegetarian dishes in the future for two reasons. 1) Vegetarian dishes tend to be lighter and healthier and 2) they are significantly less expensive to make. I love eating meat and could never go completely without it...but it will probably be better for our health (and our wallets) in the long run if we opt for meatless dishes more often than not.
