It's That Time Again...Menu Plan Monday!


       I hope everybody had a fabulous week! I sure did. I'm excited to start this week now, partially because of the recipes (some found, some invented) that I'm going to try! As you've read in past posts I've been trying to focus more on living simply, and so I decided to cook simple, healthy meals this week. Here's what my week looks like in the kitchen:

Mexican Casserole 

MYOTO (Make Your Own Take Out) Beef and Broccoli Stir Fry 

Dinner with Steven's Family!

(Healthy) Chicken and Corn Chowder

Caprese Pizza with Homemade Honey-Wheat Crust.

Note: Dinners in italics are recipes that I invented myself, or adapted so much from an original recipe that it can no longer be called the same thing.

Hi there, found you from After Nine to Five - just dropped by to say congrats on your internship!

As another American living abroad (met my Aussie man while in grad school in Amsterdam for 2 years, now living in Melbourne), I'm sure we have that sense of adventure in common. Looking forward to seeing the rest of your blog!

I'd love to see/hear how you do the Mexican Casserole. I'm always craving Mexican food here, but find it difficult to find what I consider typical ingredients and such.

@ Alex - it's probably a pretty white washed version, especially because Germany has called for a bit of improvisation - haha. I'll probably post the recipe tonight or tomorrow (if it goes well!)
